Drying tomatoes is an important process in the agri-food and industrial sectors, involving the full or partial removal of water from a moist product. Direct sun drying (solar drying) is the most widely used method in most developing countries for preserving agri-food products.

During drying with this technique, significant losses in both quality and quantity can occur due to various factors such as birds, insects, microorganisms, dust, rain, etc. Using solar dryers in developing countries can:
